Sweet millet with apples and honey

Sweet Millet with Apples and Honey

Country of Origin: Austria, Translated from German by Raffaela Bubner

This heavenly dish was my absolute favorite dessert as a child. It is a light, refreshing, healthy dish and is best served warm. It can be a fabulous addition on your lunch or dinner table but can also make a great hot breakfast!

Total Time: 40 min (cooking time: 25 min, preparation time: 15 min)
Yield: 2-4 servings
Difficulty: Easy

Ingredients
1½  cup millet
1½  cup  water
2 cups milk
1-2 apple
½ cup butter, unsalted
1-2 tbsp honey
½ tsp untreated lemon peel, pinch of cinnamon

Preparation
1 Peel and core the apple (or if smaller ones two apples) and cut them into small pieces.

2 Rinse the millet under hot water before putting it together with the water in a pot. Set the millet to medium high heat and when it starts boiling, turn the heat down.

3 Add milk, butter, lemon peel, cinnamon and honey to the millet and stir in lightly. Depending on the ripeness  or sort of the used apples (more or less pithier) you can add the apple pieces together with the other ingredients to the millet or a few minutes later.

4 Leave the millet to cook on the lowest flame until the millet absorbed the remaining water and milk, which should take no more than 15 to 20 minutes.

Cooking Tips
! Apple millet can be served with whipped cream and sprinkled with nuts, depending on your personal taste and preference.
! The apple millet can either be served as a main dish or as a dessert.
! Depending on your preference you can add less or more milk. More milk makes the millet creamier and brings a smoother taste to the dish.
