A recipe created by my friend Martina from Austria, who is a millet advocat e herself. You can enjoy this tasty “Milletto” hot or cold!

Ingredients
1½ cup millet
3 cups water
2 onions, minced
5 ripe tomatoes
½ cup butter, unsalted
½ cup grated cheddar cheese
pinch of salt, parsley, oregano
Preparation
1 Rinse the millet under hot water. Melt the butter and roast the onions. Then add the cubed tomatoes and the herbs.
2 Next, add the millet and let boil for a minute, then add the water and salt. Set the millet to medium high heat and when it starts boiling, turn the heat down to the lowest level and cover the pot. Leave the millet on the lowest flame until the millet absorbed all the water (add more if necessary for a creamier texture).
3 5 minutes before serving, stir in the grated cheddar and let melt. Serve hot or cold.
